Sweet & Spicy Glazed Salmon Bowl

There are meals that feel like effort… and then there are meals that feel like you have your life just a little bit together.

This is one of those meals.

It’s the kind of dinner you make when you want something warm and grounding, but still light. Something that tastes like you tried—without actually trying that hard. Sweet, spicy, salty… balanced in the way a good meal (and honestly, a good day) should be.

I find myself coming back to this over and over again.

Ingredients

For the sauce:

1/2 cup sugar-free maple syrup 1/4 cup sriracha 3 tablespoons low-sodium soy sauce 1 tablespoon lemon juice

For the bowl:

4 oz salmon fillet 1/2 cup cooked jasmine rice 1 cup steamed kale

Instructions

Start by whisking together the sauce ingredients until smooth. It should smell slightly sweet with a kick of heat. Lightly coat the salmon with some of the sauce and place it in the air fryer. Cook at 400°F for about 8–10 minutes, or until the salmon flakes easily with a fork. While the salmon cooks, pour the remaining sauce into a small saucepan. Bring it to a boil, then reduce heat and let it simmer for 3–5 minutes until it thickens slightly. Steam your kale until just tender—bright green, not overdone. Build your bowl: Start with jasmine rice, add the salmon, layer in the kale, and finish with a drizzle of the warm sauce over everything.

Notes

If you like a little extra heat, add more sriracha to the sauce. This also works beautifully with broccoli or green beans if you want to switch it up. Double the salmon if you’re needing something more filling—this recipe scales easily.

There’s something about a bowl like this that feels steady. Predictable in the best way.

A reminder that not everything has to be complicated to be good.

And lately, I think we all need more of that.
