Egg-actly What Breakfast Was Missing.
Easy as pie. Piece of cake.

Ok, I’m done with puns. Maybe.
Obviously eggs have always been a big breakfast staple for everyone. I LOVE them. Boiled, over easy, scrambled, pickled, deviled…
I love an omelet with a bunch of delicious veggies, topped with salsa, Greek yogurt and guac. Yum. But who has time to do that every morning? Not me.
I kept seeing reels from all the recipe accounts I follow that suggested mixing cottage cheese with eggs and baking the mixture in the oven. Super easy. Makes an enough for everyone and for a few days. Ok, I’ll bite…. (Does that count as a pun?)
The first one I made I just grabbed what veggies and cheese I had on hand. I also usually always have plain Greek yogurt and cottage cheese on hand because I use them a lot when cooking as substitutes. I mixed 6 large eggs, a cup of cottage cheese, spring onion, grape tomatoes, an orange bell pepper and feta cheese. Sprayed down a pie dish with cooking oil and popped it in the oven on 400 degrees for 45 minutes.

Time can vary depending on your oven and the size of the pan you use. The top will start to brown and that is when I know to take it out of the oven. Also you can do the fork in the center trick like with a cake. Easy peasy.
I will note this isn’t a quiche because there isn’t a crust. It is kinda of crustless quiche I guess?
Also, not truly a frittata because you typically start those on the stove top and then put it in the oven. So…I will just continue saying egg pie.
I have tried several variations of this in the last few weeks. I baked a larger one with a dozen eggs and a cup of cottage cheese and cup of plain greek yogurt and baked it in a cake dish to make extra. The Greek yogurt does seem to make the texture creamier, the cottage cheese is fluffier. You can use either or…or half and half the mixture.
Some of my favorite combos so far:
Spring onion, chopped honey ham and fiesta cheese.
Mushrooms, onion, tomato, spinach and feta cheese
Italian blend cheese, spinach, grape tomatoes and white onion
Cheddar cheese, peppers, turkey bacon, spring onion.
You can seriously add whatever makes you happy. Add some goat cheese, some sausage, maybe zucchini, or how about some broccoli? Yum. The possibilities are endless. Kind of like a pizza. Minus pineapple. (Yes, I do like pineapple on my pizza. Come for me.)
